As the Island’s only commercial producer of smoked fish we pride ourselves in being able to offer a wide range of top quality products. All our salmon, haddock, herrings and trout arrives fresh and we cut and prepare it for smoking on site.
We then either dry salt or brine the fish before placing it in one of our kilns. Using a blend of oak sawdust and shavings we set the fires in the ‘Afos’ kilns and carefully control and monitor the process. The result is a delicate oak smoked product with no added colours or preservatives, only natural ingredients.
We then slice and vacuum pack the fish to ensure maximum freshness and it is then ready for sale as either a fresh or frozen product. As well as the usual smoked fish products like Smoked Salmon, Smoked Trout, Kippers and Smoked Haddock we also produce Smoked Prawns, Smoked Mussels, Smoked Sprats (Brisling), Smoked Mackerel, Smoked Grey Mullet and Smoked Pollack.
